Warming Red Lentil & Sweet Potato Soup

Ingredients 

🍓 2 tbsp of coconut oil

🍓 1 medium onion finely chopped 

🍓 2 small sweet potatoes peeled and cut into  2 cm cubes

🍓 1/4  tsp of salt 

🍓 4 tsp of fresh ginger finely grated 

🍓 3 garlic cloves finely grated 

🍓 1 tbsp of red curry paste or more to taste (I used thai red curry paste. It gave it a lovely flavour.) 

🍓  1 cup of red lentils rinsed 

🍓 1 14.5 ounce can of diced tomatoes 

🍓 1 14 ounce can of full fat coconut milk

🍓 Zest of 1 lime 

🍓 2 1/2 cups of water

🍓 1 tbsp of soy sauce 

Instructions 

1. Heat coconut oil in a large pot.

2. Add onion and cook for about 4 minutes or until soft. Add the sweet potato and  1/2 tsp of salt and cook for 5 minutes (stirring frequently) until the outsides lose their firmness. 

3. Push the sweet potatoes and onions to one side of the pot and add the ginger, garlic, red curry paste, and lime zest. Cook for 30 seconds then stir together with the sweet potatoes and onions. 

4. Add the red lentils, tomatoes, coconut milk, soy sauce, and water. Bring mixture to a boil. 

5. Reduce heat and simmer gently. Stirring occasionally until lentils are soft, about 20 minutes, thinning with water if needed. 

6. Divide between bowls.
