This hearty lentil soup is prefect for chilly nights when you desire a warm meal. Containing sweet potatoes, tomatoes, red lentils, and coconut milk; all balanced out with some red curry paste and different warming flavours. Now that the cold monthhs are here, soup is the perfect cozy meal for a cold night.

Ingredients
🍓 2 tbsp of coconut oil
🍓 1 medium onion finely chopped
🍓 2 small sweet potatoes peeled and cut into 2 cm cubes
🍓 1/4 tsp of salt
🍓 4 tsp of ginger finely grated
🍓 3 garlic cloves finely grated
🍓 1 tbsp of red curry paste or more to taste
🍓 1 cup of red lentils rinsed
🍓 1 14.5 ounce can of diced tomatoes
🍓 1 14 ounce can of full fat coconut milk
🍓 Zest of 1 lime
🍓 2 1/2 cups of water
🍓 1 tbsp of soy sauce
Instructions
Heat coconut oil in a large pot.
Add onion and cook for about 4 minutes or until soft. Add the sweet potato and 1/2 tsp of salt and cook for 5 minutes (stirring frequently) until the outsides lose their firmness.
Push the sweet potatoes and onions to one side of the pot and add the ginger, garlic, red curry paste, and lime zest. Cook for 30 seconds then stir together with the sweet potatoes and onions.
Add the red lentils, tomatoes, coconut milk, soy sauce, and water. Bring mixture to a boil.
Reduce heat and simmer gently. Stirring occasionally until lentils are soft, about 20 minutes, thinning with water if needed.
Divide between bowls.
