Fall is here so do you know what that means? It's pumpkin season! This is a perfect fun way to use up pumpkins when you have so many that you don't know what to do with them. These are healthy, soft, and use a warming combination of spices such as cinnamon, ginger, nutmeg and cloves.

Ingredients
🍓 1 3/4 cups of all purpose flour
🍓 1/3 cup of oats
🍓 1 tbsp of granulated sugar
🍓 2 tsp of baking powder
🍓 1 tsp of baking soda
🍓 1/2 tsp of salt
🍓 1 tsp of cinnamon
🍓 1/2 tsp of ground ginger
🍓 1/4 tsp of ground nutmeg
🍓 1/4 tsp of cloves
🍓 1/3 cup of vegetable oil
🍓 1/2 cup of maple syrup or honey
🍓 2 eggs
🍓 2 tsp of vanilla
🍓 1/4 cup of milk
🍓 1 cup of pumpkin purée
🍓 Oats for topping
Instructions
Preheat the oven to 350ºF. Line a muffin tin with 12 muffin wrappers. Set aside.
In a large bowl, mix the flour, oats, sugar, salt, cinnamon, gingerr, nutmeg, and cloves.
In a seperate bowl, mix the vegetable oil, maple syrup, eggs, vanilla, milk and pumpkin purée.
Pour the wet mixture into the dry mixture and mix until fully combined.
Evenly scoop the batter into the muffins tins, sprinkling the tops with oats.
Bake for 25 to 30 minutes or until a toothpick comes out clean and the tops are golden brown.
Let cool for 10 minutes before removing from the pan and transferring onto a cooling rack.
