This recipe is a fun twist on the classic banana muffin. Unlike the classic banana muffin, this contains shredded coconut, and delicious chocolate chips. Instead of butter I’ve added coconut oil to give it an extra pop of coconut, pairing very well with the banana flavour.

Ingredients
🍓 2 cups of all purpose flour
🍓 1 tbsp of baking powder
🍓 1/2 tsp of baking soda
🍓 1/4 tsp of salt
🍓 1/2 tsp of cinnamon
🍓 1/2 cup of unsweetened shredded coconut
🍓 3 ripe bananas mashed
🍓 1/2 cup coconut oil melted and cooled
🍓 1/2 cup of maple syrup or honey
🍓 1 large egg
🍓 1/2 cup of semi sweet chocolate chips
Instructions
Preheat the oven to 350ºF. Line a 12 cup muffin tin with muffin cups. Set aside.
In a large bowl, mix the flour, baking powder, baking soda, salt, cinnamon, shredded coconut, and chocolate chips.
In a separate smaller bowl, mix the mashed bananas, coconut oil, maple syrup and egg.
Pour the wet mixture into the dry mixture and mix until fully combined.
Evenly distribute the batter between the muffin cups.
Bake for 25 to 30 minutes or until the tops are golden brown and a toothpick comes out clean.
Let cool for 10 minutes before removing from the muffin tin.
